Happy Father Day + Weekend Round-up!!

Hello friends! "Mommy Camp" had commenced on Friday, and with a sweet, bright and sunshine-filled start (frozen yogurt and hours at Coldwater Canyon Park), I'm very much looking forward to Summer filled with heaps of fresh air, frequent trips, and lots of hands-on learning! So happy to be able to spend the next few months watching my little girls laugh,eat, play, and grow - together.

Anyways, while I re-arrange and pencil in some more of our June lessons plans, and decide just how decadently we'll be treating Mr. Dad tomorrow morning, here's a list of things I've been checking out this week:

- A hilarious song (that Freida and I have been singing non-stop!) to kickstart your weekend!

- Can't wait to make these oats + caramel bars this week to keep in stock for impromptu summer picnics.

Into the Mouths of Children: Apricots & Yogurt

With summer navels back in season, I've had a very happy little fruit monster this week! I love trying to integrate seasonal bounty into our everyday snacks and meals. Apricots + Yogurt is one of our family favorites. Just wash and splice open some fresh ripe apricots, spoon in some full fat yogurt, and drizzle with honey or maple syrup. Perfect for an energy boost mid-afternoon - it's fiber-and-protein-rich snack food. Plus, once I'm making it for Freida, I whip some up for myself with non-fat yogurt and sprinkled with chopped or slivered almonds...since I'm really the one in an afternoon mood slump. :)

Butter-Brownie-Bottom Cheesecake

So, cheesecake.

Even though she's my bestie (thanks Rach!) and she's probably just prejiduice and showing me the love, after badgering me to post this recipe as "the best cheesecake you'll ever have", I finally gave way - it is a damn good cheesecake after all is said and done. :)

And, while I truly wish I could take credit for this delectably decadent dessert, the truth is it's actually a Susie Fishbein recipe-child. It's her "3 Layer Cheesecake" from Kosher By Design Entertains. The secret - and listen up here! - is to double the cheesecake part of the recipe! Shh! Just do it.
