Presto Pesto!

We are serious basil-lovers in this household, with pesto being a favorite. Between Freida, Manasseh, and myself - we go through lots of this stuff! We use it on pretty much everything (the normal and the not-so-normal), from picnic pasta to scrambled eggs in the AM. Manasseh loves it on sandwiches - it's amazing on a schnitzel sandwich, steak sandwich, cold cuts etc. Freida will eat anything if it's got pesto (or marinara) on it, and I like having it on hand to give a low-fat Omega-3-loaded flavorful kick to anything at all! I make batches of it, and store it in baby food jars (it last up to a week in the fridge, and with some extra olive oil at the top it maintains its color pretty well).

Here's the basic recipe (the amounts are not exact and totally flexible):

2 Cups Fresh Basil Leaves

3-4 Garlic Cloves

1 Tablespoon Pine Nuts (Pignolis)

2 Tablespoons Walnuts

3 Tablespoons E.V. Olive Oil

Salt & Pepper (to taste)

Using a food processor, blend the basil (make sure to wash and check it - especially in the summer), garlic, and nuts together. Slowly drizzle in the olive oil. Add salt and pepper. Voilà!

There can be all sorts of variations to pesto, the most common (and the most perfect!) is to add in about a tablespoon of parmesan cheese. This week I tried adding some sun-dried tomatos to the blend, and the flavor was incredible!

Freida's still a little young to be channel-surfing (though I'm sure my husband would love that!), but I can't say I don't see this as practical. I remember being a kid and trying to memorize which channels were what number etc. - tough stuff! Eat, Pray, Love

I feel like the only one who is totally psyched to see "Eat, Pray, Love" in this town!! Please pick up a copy of this woman's incredible journey, consume the written pages, (inevitably, contrast to our way of life and faith), and learn a thing or two from someones else's memoir of self-discovery... Then round up your girlfriends and hit the film! : )

Playing with Dough

Every once in a while I chuck out our playdough supply (it gets grimy and dirty pretty quickly when used often), and whip up a new batch. (Get the recipe here.) We've been working on Freida's colors (for now she knows blue, yellow, purple, and black... not bad!), so I veered from my usual "neon" coloring and broke out the primaries. And while I did end up staining my favorite board a bit, we had heaps of colorful fun!!!

Wanting to up the anti on this classic activity, I decided to add in another sensory factor; I gave the orange and yellow doughs a nice dash of orange/lemon extract (I though this may probe her to eat it, but she gave up on that months ago). This fun little addition made the simple playtime basic not just a terrific tactile experience, but a fun olfactory exploration as well!

Then we just played around... made some fun little creatures out of all those great colors + a handful of pocket trinkets.

She was really perturbed by the fact that the catterpillar had a penny in his mouth (I should have thought of that one while assembling them with her!)...

When we finally tired out, we retired the dough to their own little disposable Glad® containers for easy long-term storage.
